Traditional Salami Making & Tasting in a 14th-Century Convent | Abruzzo

Discover the secrets of "Ventricina" and authentic Italian charcuterie in the heart of Carunchio.

4 hours

Easy

Step back in time and immerse yourself in the authentic flavors of Abruzzo at La Genuina, a family-run artisanal laboratory nestled within a stunning 1300s former convent. Located in the scenic village of Carunchio, this experience offers a rare glimpse into the "Trigno Valley" traditions, where ancient history meets the art of meat curing.

Guided by local experts, you will explore the fascinating processing phases of traditional cured meats, all crafted without preservatives or artificial colors. Depending on your group size, you can choose from an intimate tasting of local salumi and cheeses, a full traditional Abruzzo lunch, or even a hands-on workshop where you actively participate in the artisanal production of salami.
